Lunch: lazy latkes 3 potatoes shredded add 2 eggs feeds 4 mix them up and fry it in a pan with heated oil top with sour cream and applesauce

cost: $56.00 (I ended up buying a 25 pound bag of onions since they were on sale $2.99 and we were low on lots of items not on sale :( but with that said some weeks you go a little over, but most of the time it is lower so we try to keep that extra money just for these weeks... and after a couple months you may have extra to buy a large bag flour rice and sugar!)

Dinner: cauliflower soup grind the cauliflower pretty well and you honestly don't need the cheese... but it will be a little thinner (I prefer the potato soup but this was a good way to eat up all my cauliflower)

Wednesday:
Breakfast: potato cakes
Lunch: cheesy french bread
Dinner:tamale pie

Thursday:
Breakfast: french toast
Lunch: parsley pesto pasta
Dinner: herbed ricotta tomato tart

Friday:
Breakfast: biscuits 
Lunch: picnic sandwiches
Dinner: Tex Mex rice and cornbread
Dessert: campfire scones

Saturday:

This week is hard to say how much it cost. We bought a lot of non food related things and I was to lazy to divide it up. Total was $72 but I bought stuff for laundry, dishes, toilet paper etc... I know we didn't go over the $50 on the food though!

Tuesday Potato Cheese Soup since it sounds magical to my pregnant belly and we didn't get to it last week and my mom's secret yummy rolls.

Wednesday we are eating the Vegetarian Southwest One-Pot Dinner with changes in recipe. We didnt get to it last week either...





Thursday Hawaiian Haystacks ours were a bit different I used cream of celery soup, celery, pineapple, tomatoes, olives, chow mein noodles,  green onion cheese and red pepper served over rice






Friday the biscuit and gravy mashed potato chicken and salad meal we didnt get to last week. We didn' get to it yet again this week since we were super busy and we ate a $5 pizza from Little Caesers.

Saturday we are having our open house to our sealing so we will be eating there.

I am a new member of the crockin girls! If you are looking for ideas for your menu planning try this out! Great for busy days. They even have premade meal plans so if you weren't sure about the $50/week menu planning this is an easy way to do it. There are school lunch ideas and yummy desserts. Though most of these have meat I think I can make some differently for our whole family to enjoy. So  I am excited for new ideas!

This was my plan for this last week:

Dinner:






Monday home made pizza and cheese sticks with homemade mozzarella



Tuesday the tacos we still have all the ingredients from last week!





Wednesday shepherds pie (using leftover potatoes from sunday onions and some canned beans and tomato soup we need to eat up, veggie meat for me and regular ground beef for my husbands.




Thursday Olive Garden bread sticks wheat spaghetti I make homemade in minutes and homemade Alfredo sauce and the rest of the broccoli from last week steamed





Friday biscuits  and gravy the vegetable stock is simple to make just freeze or put veggie pieces in zip lock and even the pieces you wouldnt normally eat steams etc. wash them and make sure they are still in good  shape boil in water and add a little salt to taste.  chicken breast for the hubby and daughter and a salad with whatever is in the fridge!





Saturday rolls and potato cheese soup. soup sounds good some reason I made changes to work with what we had at home







Sunday vegetarian southwest one pot dinner with some changes for my pallet and what we have.

We spent just over $52 in groceries and I wouldn't have gone over if I didn't promise my daughter ice cream this week. She reminded me this when we hit the ice cream area. I also bought tons of dairy since we were out which is why the grocery bill was high this week. I bought 4lbs of cheese since I went to Winco. They have the best prices on their packaged cheese and it tastes amazing! Winco is a little bit from home, but I was in that area for another reason so I got enough cheese for 2 weeks. Since I don't eat meat I supplement lots of cheese. We got produce we needed, eggs, cheese, lots of butter for baking and spread, ice cream, soy milk, bread, meat for my hubbys tacos and shepherds pie, and lots of stuff I am forgetting. I felt like this week we stocked up on dairy product that should take us into other weeks...


I think I will start showing recipes and pictures from our dinners, now that I am getting a better hang at this weekly post. So. Friday, Saturday, and Sunday will be on this weeks menu!




Update on the $50/week grocery

Recently, I was inspired by $50/week groceries on  this blog. Our family has been testing it out the last little bit and we have been doing great! I have to admit there was a rocky start, but once I established a routine it has been fabulous!

  1. Sunday night is my meal planning time. I do breakfast, lunch, dinner and snacks, checking items at home I need or can use.
  2. After the weekly menu is ready I go through the recipes and write down what I need for every meal. Here is my shopping list. 
  3. Now, for the harder part, Monday morning i do my shopping for everything I NEED, that is right, need! The fruit snacks appealed to my two year old daughter, ranch dip and chips for my husband, and all the deals caught my eye. I had to remind everyone (including myself) we are on a budget and trying to be healthier.
  4. This is when you have to use logic and go to the store with a full belly... I didn't plan for snacks I instead got a flat of strawberries for $5 that where on sale and bananas. We already have fruit snacks, crackers and popsicles at home. It was tough to pass that deal up on the strawberries and I knew it would be great for all sorts of things!
My menu this last week:

DINNER
Monday was my day off since we actually didn't shop until later when our tummies where hungry. We did a splurge for Papa John's since Monday nights are large one topping for $6.50 at our local store. 

Tuesday night was my husband's birthday so we used a gift certificate to Red Robin (sorry doesn't count really). Check for restaurant coupons and deals before you go. By the way since it took an hour after ordering to get our food we actually ate free...

Wednesday we had my husband's favorite Nacho's. Super easy recipe santitas chips and  microwave some cheese on the chips or use nacho cheese (my husbands favorite nacho cheese is the campbell soup kind). Next dallop warmed refried beans, layer with shredded lettuce sliced olives and diced tomatoes. Top with your favorite salsa and some sour cream! yummy! 

Thursday orange chicken, white rice and stir fry. The stir fry I used fresh veggies including, onion, green pepper, carrots, snap peas, and broccoli. I try to ditch the bags and go for fresh when possible and there are plenty of veggies for the rest of the week and extras for next week.

 
Friday we were suppose to have enchiladas but the cheese and eggs are expiring so we had breakfast for dinner instead. Sounds like tomorrow we will have the enchiladas instead. 

Saturday enchiladas we had planned tacos and that will now be next week.  My husband planned the menu this week for his birthday week and as you can tell he loves Mexican food. We will also have tons of extra enchiladas for lunches!


Sunday we had steak, cheesy potatoes and steamed broccoli. I am pretty excited about this one, I don't eat meat so we can afford to have my husband's steak which he will share with our daughter. I make my famous garlic mashed potatoes and then top with cheese and throw in the oven. "Cheesy Tatoes" are our families favorite! We all love the steamed broccoli as well, and I don't add a thing to them, just steamed to perfection!


LUNCH:

I don't have certain days since it depends on time and mood. 

Grilled cheese sandwiches

Spaghetti with sauce (I make noodles from scratch super easy if you have the tool that flatens and cuts)

Cheese quesadilla

Leftovers

Sometimes breakfast for lunch


BREAKFAST:

Cheese omelet

Applesauce (I made and canned it off my tree)

Homemade Strawberry Lemonade

Our bill came to $41.28 at the grocery store (which included a $7 steak) plus the $7.00 at Papa John's we had some $ to spare!


We already have spices, baking supplies and some of the things needed to make these meals. This week we bought enough chicken for the month (since we have 1 and a half meat eaters), oatmeal and several other things that will last more then this week. If every week you are buying produce plus a few things to last to another week or a few, you will start having variety. Luckily for me I already have lots of the essentials on hand. My husband and I spoke about most likely keeping our food storage up every 6 month by stock  piling   during the case lot sale in Sept/Oct and March/Apr. This is the best time at our stores to get some canned food essentials like olives and baking supplies like our flour and sugar. Though we will be doing $50/ week, every 6 months we will be buying essentials and food storage that we will save a little on the side to do so.


Homemade Laundry Powder Detergent

Here's a great recipe I snagged from SavyBrown. Super easy to make, smells great, gets your clothes clean even in a fancy HE machine.
What you'll need:
  • 1 cup Borax
  • 1 cup Washing Soda (You can find this in the laundry aisle.)
  • 1 bar of Soap (I use Fels Naptha)
  • Box Grater (Use the smallest grater you have on hand.)
  • 1 wide mouth container (I use an ice cream bucket so I can have a cover to mix everything together)
  • 1 tablespoon or small tbsp scoop
Grate the soap. Use the smallest grade.
Crumble the soap to break it down more.
Combine all ingredients in your container & mix.
How to Use:
  • Small loads - 1 tbsp
  • Normal loads - 2 tbsp
  • Heavy loads - 3 tbsp (I use 4 tbsp when I have a really dirty load to wash.)
When using this washing detergent, I usually fill up the washer first before adding the clothes. Please keep in mind that this recipe will take getting used to since you will not see any suds. It lacks sodium laureth sulfate (a common detergent that causes suds, lather and foaming). 

Sodium laureth sulfate is common because it is inexpensive and an effective cleaning agent. However, it is known to cause skin irritation and contribute to the development of cancer in certain concentrations.

Fortunately, sodium laureth sulfate is not the only cleaning agent out there! The combination of ingredients in this receipt will give you a eco & health-friendly way to get your clothes clean.

*NOTE: Even though this is a healthier alternative to traditional detergents, they are still cleaning agents. Avoid contact with your eyes, don't eat it no matter how good it smells and wash your hands after working with it.

So I found my new match, so to speak! I am so excited I found a lady that knows how to cook good meal for her family for only $50/week! I thought we did well when we spent 350/ month! Super excited to try to adapt her meat meal to non meat for me! I am sure my hubby will enjoy her recipes though. I am always excited for new budget cutting ideas! So excited going to start right away!


Hummingbird Nectar Recipe

So, one of my favorite birds to watch are Hummingbirds. They are curious birds who have a distinct sound that is easy to identify once you can recognize it. My boys enjoy watching them eat from our feeder so I try to make sure the containers consistently have nectar in them. 

Flower nectar is 21-23% sucrose (table sugar), which Hummingbirds love to consume. The nectar can be artificial made for low cost. Below is a great recipe that I've used with success!

Ingredients you'll need: 1 part white sugar to 4 parts water (THAT'S IT!)

  • I usually do 1 Cup sugar to 4 Cups water since my feeders are small. 
  • Combine all ingredients in a pot and bring to a boil. 
  • Stir while solution is heating until all the sugar is dissolved. (Avoid boiling for too long since that will change the sugar/water ratio as the water is boiled off.)
  • The reason for boiling is to eliminate chlorine/other mineral deposits in the water and to kill mold/yeast spores that may be in the sugar. This allows the nectar to last longer while protecting the Hummingbirds. 
  • Allow your solution to cool before using it in your feeder or storing in the refrigerator.

**NOTE: Using food coloring, honey, Jell-O, brown sugar or artificial sweeteners may harm your hummingbirds.

Contrary to popular belief, your nectar does not have to be red in order to attract hummingbirds. It is the red of the flowers that holds the power of influence. You can add red to your feeder by tying a red ribbon on it to attract them OR you can buy a feeder already designed to do that.

So all you need a yellow cake mix items needed on box and fresh strawberries! Just add cut up strawberries to cake mix, make as directed on box and once cooled add sliced berries on top! My mouth is salivating thinking of it now! YUM!

Just a cute cheap idea for friends, family or neighbors. I got several flats of strawberries for $6 a flat! How I love strawberry season! We made strawberry syrup and jam. You can make it at the same time, just take the syrup portion out after pureeing and adding sugar if you would like. Then follow jam directions with the rest! I froze some for smoothies, made lots of yummy recipes and my daughter even ate a whole pound in a sitting. Why not share the wealth? So I quickly made up some tags and left them on peoples door steps. "You Are Berry Special" Have a happy berry season!

My husband and I are almost ready to buy a house! yay! We are finally about there, but with a few things left on the list we are squeezing our pennies. It is a great feeling when you are almost reaching a goal you have set a long time ago, but when pinching pennies you have to find a way to have fun! We have been trying to eat in for all our meals lately and breakfast is no exception.My daughter would have scrambled eggs for every meal if I would let her. So sick of eggs and cereal, I have been making waffles and pancakes. She is two and thinks that since it says cakes at the end of the word they are cakes. So she tells me she wants "cakes" for breakfast. I was thinking, "yum cake for breakfast".  So I started tweaking my recipe for my plain Jane pancakes to... why do you need IHOP breakfast cakes!

PLAIN JANE CAKES
1 cup flour
1 tbs sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 egg
blend together, spray cooking skillet or waffle maker with oil, and cook on med heat to desired golden color.

BANANA CAKES
add
mashed ripe banana
and cinnamon  to batter
top with Carmel sauce (i just use a little from my banana split stash)
syrup
and whip topping






BANANA SPLIT CAKES
add
mashed banana to the batter
top with
desired banana split topping
such as
strawberry sauce, jam or fresh
pineapples
whip topping
Carmel
chocolate
nuts
bananas
whip topping

CHOCOLATE CAKES
add
couple tablespoons coco powder (to desired taste)
chocolate chips to batter
top with
chocolate syrup and mini chocolate chips and raspberries yum!

RED VELVET CAKES
add
red food coloring
1 tsp vanilla flavoring to batter
top with cream cheese frosting
nuts optional

CARROT CAKES
add
1 cup thinly shredded carrots
cinnamon to batter
top with
cream cheese frosting

Delicious Pear Crisp

I bought a 3lb bag of pears the other day for $1.50.  They were finally ripe enough to eat today, after waiting what seemed like forever.  I used about half of them to make a pear crisp.  And it was awesome, totally made my day.



PEAR CRISP


6-7 medium size pears, peeled and cubed
1/2 C sugar
2 tsp. lemon juice
1/4 tsp. salt

Stir pears, sugar, lemon juice, and salt together and pour into a greased baking dish.

1 1/2 C flour
3/4 C brown sugar
1 tsp. cinnamon
1/2 C pecans, chopped
1/2 C dried cranberries
1/2 C butter, melted

Mix together the flour, brown sugar, cinnamon, pecans, and dried cranberries.  Mix in the melted butter, stir until well combined.
Sprinkle the topping over the pears in the baking dish.  Bake at 375 for 25 minutes.

We also used a couple of pears in our salad tonight for dinner.  Mix together romaine lettuce, sliced pears, a sprinkle of feta, a handful of dried cranberries, some fresh ground black pepper, and drizzle with Balsamic vinegar dressing.  Delicious!

Have a Smores Birthday!

Since I had my birthday not too long ago, I thought I would share how I spent it. Super cheap idea you could expand for a kids birthday or just for a social. My birthday was a very small gathering but I thought I would still have some fun with it. I honestly just bought some big marshmallows and chocolate bars at the store, Styrofoam cups and plates from the dollars store. We have a wood burning fireplace so this made it kinda fun to roast the mellos in. Other ideas use the stove, fire pit, or mini BBQ. Anything you use be careful, it is not fun if you get burned! Take wire hangers and use those to roast the mellows. I had a variety of different ways to do the smores. The original Graham crackers and chocolate. I had a little fun by making cookies and brownies to put on either side of the marshmallow. There was also a variety of hot drinks... herbal teas, different flavor hot cocos, and apple cider.
